Pork Cottage Roll

A cottage roll is a sweet brined boneless Pork butt. Don't know if they are called that in the States. I slow boiled it for an hour with bay leaves, garlic and assorted peppercorns. Then on the Akorn at 300 degrees until it reached 130. Then I started glazing it with a marmalade, maple syrup and Dijon mustard mix until 155 degrees. The glaze turned to a taffy apple consistency.
Crunchy outside and tender as could be inside. Served with some boiled cabbage.

Remove packaging but leave the net on. Put in a pan and cover with water. Add 2 bay leaves, 1 teaspoon garlic (powder or minced cloves) and some whole peppercorns. Bring to a boil, turn down and low boil for about an hour. Remove and now remove netting. Put on bbq at about 300 degrees until internal temperature of 130 degrees. I used Apple wood for smoke flavor.
Mix together 2 heaping tablespoons of marmalade, 2 tablespoons of maple syrup or honey and 1 tablespoon of Dijon mustard. Baste often until temp gets to 155. Let rest a few minutes and then enjoy.
You can skip the boil and just remove the netting and then bbq also but I like to boil some of the saltiness away.

The sweet pickled is probably a little different than what I have had. Ones I get taste just like ham. Don
