Mrs H wanted shrimp and salmon. So got the PK Grill and Grill Grates heated up nicely. Indirectly cooking the pan of eggplant for an hour uncovered, then an hour covered. Before the second hour was up the salmon filet with evoo and Old Bay Blackened Seasoning was put on along with skewered shrimp that got a dusting of Big Dick's Margarita Rub. This was a simple yet very tasty meal enjoyed with a crisp rose' vino.
