Smoked Pork Loin

Smoked a pork loin last weekend. I set the temp at 200, but it was too hard for the Grill to keep the temp that low with the pellet mix I was using; the internal temp was up at around 260. The loin cooked faster than I wanted, so I pulled it off at 140 IT and let it sit until closer to dinner. Left the thermometer probe in it so it was ready when it was time to finish. Put it in the kitchen oven at 300 until the IT hit 160. Cut into it, and the smoke ring was beautiful! Everyone loved the slices, so, another successful meal!  ;)
