Congratulations.  They are a nice grill.  I got one right before Christmas and have done a few cooks so far.  Are they still numbering these grills or did they stop with the initial orders?

Do the black shelves seem pretty durable?  Mine has the ironwood shelves but I didn't know how durable they will be long term.  I was thinking of maybe trying to get a set of the black ones so I can preserve the wood ones.

Here is a metal bucket I bought at Home Depot that works very well with the PK360 for sweeping the ash into.  Here is a link. http://www.homedepot.com/p/United-Solutions-5-qt-Metal-Pail-with-Handle-PN0129/300236365

I just bent the handle down a little so the sides near the attachment point flared out slightly and it fits perfectly over the two hooks on either side of the ash sweepout hole in the bottom of the grill.  I just leave mine attached after dumping the ash.

The other night I cooked on my PK360 and my original style PK at the same time.  I really love both of these grills.  Anyway, enjoy it.

No numbers anymore. Fired it up yesterday and when I use lump charcoal I get a lot of sparklers blowing out. Lot of them landed on the shelves, I thought it would leave some little burn marks on them, but wiped up with no problems. I did some brats and grilled onions/peppers tonight and turned out great. I used a 12" oval comal to grill the veggies and it worked very well. Afterwards, I put a whole chicken seasoned with Maceo's Honey Brown's BBQ rub on using indirect cooking and it's coming along nicely.

Gonna look for that bucket at local HD tomorrow, thanks!

I had a lot of sparks land on my shelves the other night from the chimney and I was worried that I would get some burn marks but as far as I could tell there were none.

The buckets were a new item at my Home Depot and were with the plastic buckets in the paint section. 

Let us know how the chicken turned out.  I've reversed seared some filet Mignon on mine a couple of times but that is the extent of my cooking indirect on this grill so far.  Once it starts getting warmer, I will try some more indirect cooking on it.  Thanks for the info and enjoy it.

It was late, when I took the chicken off it had a great smoke on the outer skin, thigh was nice and juicy as was the breast. Nominal temp was 165 when I took it off. Wife proclaimed it excellent, as I'm not much a fan of chicken fixed anyway. But it did look good enough to eat

Those ribs look great as well as the rest of the meal.  How long did you cook them for and at what temp?  Did you use a rib rack?  I have not cooked ribs yet on mine but I want to try it out the next time I do cook ribs.

I have a PK rib rack but I didn't know if I need to turn the rack part way through the cook or not.  I usually cook ribs on my PBC or Good One Open Range.

I started out with the rib rack, but the ends of the ribs at the top of the rack were getting really overdone. Halfway through I took them out and laid them on the normal rack. Cooked more evenly in my opinion that way. I started out with 300 on the dial but it evened out around 250/275

Thanks for the information.  How long was your cook?  I wonder if you would have still gotten the tops overdone if you would have cooked at a little lower temps?

Question for the PK 360 owners.

Do you see anyway to hook up a fan for the Rock's Stoker Controller?

It would be pretty easy to mount a fan onto one end of one of the tubes, and plug the other end.
I may create a fan mount with one of my 3D printers.. I have been using a Bbqguru Procomm 4 unit for many years, so I will try that fan mount first.

There's no particular rush for me, as I bought the PK360 primarily for high temp grilling, and leave the low and slow cooking to my Blazn Grid Iron.  I have also given some thought about options for routing probe wires...
