Quick dinner tonight. Smoked Portobello mushrooms stuffed with jack cheese and New Mexico green chile, with a side of (leftover) green chile chicken enchiladas...

That looks awesome!  How long did you smoke the 'shrooms?  I've grilled them and used them like a burger before but never smoked one.  I definitely want to give this a try.

I smoked the mushrooms at 200 degrees for about 20 minutes, just enough to get some light smoke. Then I cranked the temp up to 400 to finish. Pulled them when the cheese got bubbly and a little brown, like a pizza. I wanted to be careful not to oversmoke the mushrooms, and they turned out just about perfect! I used Lumberjack Competition Blend (Maple Hickory Cherry).

Definitely adding these to my regular rotation...
