My son caught some salmon a couple weeks ago.  Saturday was the first time we could get together to smoke up a couple fillets.  I get to smoke the fish and spend time with him AND I get to keep some of the salmon.  Since he was there I reverse seared a couple of NY Strips for dinner.  We really had a nice day.

I dry-cured the salmon Friday night.  The recipe called for 12 - 24 hours (Alton Brown recipe) and it ended up at about 19 hours before getting it on the smoker.  I used the Amazn-Tube smoker for cold-smoke with Apple for about an hour and then fired up the pellet grill at 160 degrees with 100% Alder to finish it off.  I pulled it at IT of 150 degrees.  It turned out great.  Solid smoke flavor with some moisture still in the fish.

For Dinner I pulled out a couple of monster NY Strips that I got at Costco and did a reverse sear. I could only manage to eat about 1/3 of my steak (used some of the leftovers for steak and eggs on Sunday and brought the rest for lunch today) but he manged to finish his off.  Served with baked potato and side salad.  All-in-all a great day with "The Kid" (he's 26  :D)

 Ditto here.... can't see, but....I've used that recipe many times. It's a good one so I know you ate well and had a great time visiting!

It's fun when my son and daughter come over with food or FT.  Kids are so busy nowadays.  My food bill is less but my wife misses them.  Your salmon and steak looks great.
