As to why I posted to sell it. I just have mixed feelings about it. It's the weirdest thing. I am not crazy about the strong flavor it imparts on my cooks. With that said mostly everyone that eats the food I make off the pbc say it's the best bbq they ever had. My father in law would eat the ribs I make on it if they were to fall on the ground even. Lol . But I'm not crazy about it. I'm a weirdo I guess

No not at all. The grease fog flavor is unique. I used a big drum smoker 75 gallon barrel for about 5 years and one night my entire family told me they can not stand the flavor from the drum. I couldn't get enough of it, but the drum got sold............

Yep, I tried to tame the fog on my PBC but gave up. Sold it with the quickness! I love the company, the story behind, the people behind it but I just couldn't get food I liked off of it. Sad really, I REALLY WANTED to love it. I did make a few good meals from it though.

Can you describe this "grease fog" flavor you refer to please.
And is it inherent in all drum smokers?

The "grease fog" only happens in vertical drum smokers that cook directly over the coals below. Drippings and seasonings from the meat fall below to the lit coals and sizzles and burns and adds another flavor profile.

However, the mix of the drippings and the briquettes creates a unique but heavy flavor that is either revered or loathed.

I ran a drum smoker solely for five years until my entire family revolted and said no more, we can' stand this flavor anymore.
