Here are some pics of my proofer that i made into a smoker.

Proofer/smoker


This is the bottom slide out where all the electronics are housed.

Here you see the components. I'm installing new terminals, thermo couple switches and wiring.














Here i have the lower slide back in. You can see the coil at the bottom. The fan blows across the coil and up the back vents to each pan shelf.







I had a couple old burnt out Master Built Electric smokers that i kept around. So we cut a hole in the top for a vent and used the MES Vent













Ok now with all the new items added its time to test it.

Using my AMZNS cold smoker to test the smoke flow.


It all works and is now fully operational.

The insides are all removable for easy cleaning.

Made some 1.5" diameter hardwood dowels for hanging.







Does jerky too  ;D

Where can we find a proofer - cheaply of course...And how many lbs can you do in there? What kind of temps are possible? Low temp smoking ony - or can you get 250-275F out of it?

You would have to do a CL search for a proofer or restaurant supply store. I did find this model CresCor online used for $1500

I got mine from my neighbor.

I had the proofer to 280* with no problems

Low temp was 66* high 280*

Properly placed i hung 85 lbs. I'm sure i could get more in if needed.

Just because my homemade smoker only took 1 & 1/2 beers to make & to be honest a 10 year old could make doesn't make me envious of  African meats project  :-[

Why not take it apart - and show us what you did, where to get the parts and such? I would love to see a "build thread" section for projects of all kinds like this. What do you think about it?
