Going to do some carnitas.

Split a boneless butt, salt, pepper.



Got my charcoal stoking in my Meadow Creek PR36



Going to apply some hickory smoke using my AMZNPS with hickory pellets. Starting with some lump to get going.





Now let em go for a bit.

I lived not far from the MC in PA and just bought mine there from Jessie.

Did the MAK demo there last April.

Got the pork from the MC. Was on for 35 mins a side.



Cubed



Place the poke cubes into a slow cooker for 8 hours on low. Add 2 cups water, salt, pepper or whatever you like.



I added a package of carnitas mix. Put the lid on and let it go.



Checked for tenderness at 6 hours. Its good now shred it.





Put the shredded poke in a baking dish with 1.5 cups of the liquid that you have in the slow cooker. Put in oven with broiler on at 400* for 30 mins to crisp up the poke.



While the poke is in the oven i mixed some flour to the remaining liquid in the cooker (put on high now) and made like a roux. Re seasoned.

After the poke is done in the oven place it back in the slow cooker (on low again) and continue to slow cook for another 1 hour.


Serve with rice and tortillas.
