a buddy gave me some leftover grill racks from rigs he's gotten rid of
one was almost a perfect fit for my vintage CB charcoal grill
all I had to do was trim it at one end
sanded & brushed on the rusty spots
fired up the grill
& mopped on some vegetable oil to season the grill

Gotcha Captain. The Portable Kitchen was designed primarily for briquettes. Lump might be too hot with the way that aluminum holds the heat...just sayin.............my neighbor has a PK and she only burns Kingsford in hers. She uses lump in her UDS.......

I had a scrap piece of stainless
I riveted a couple of hanger brackets on it
it became the new "heat shield"
still using up the oak lump charcoal
I really like how the chicken is responding to the indirect heat

..well.....
the pics make it look sexy
but don't be fooled
it had a great charcoal smokey flavor
but the skin was chewy
and the meat was tough and dry
i should have brined the bird..
but...
not even in the same league as a bird in the SRG !!

it didn't lack for moisture
it was sitting in it's own rendered fat  :'(

the beauty of the SRG is all the fat runs off into the grease trap
and infrared is truly superior for poultry
nothin' like that crisp skin
