I had two bone-in butts that my wife bought a month ago for 0.99 cents a pound. I had slathered with CYM and two different rubs. Problem is I cannot remember what they were seasoned with :D Then they were saran wrapped and vac sealed before freezing.

I pulled them out in the morning still frozen and let thaw just long enough to where the saran wrap was removable. I fired up the Traeger Jr. with Bear Mountain Hickory and set the PID to 225F. I gave the butts 3 hours of Hickory smoke from the Smoke Daddy using Hickory wood chips. 12.5 hours later I pulled the butts with a IT of 195F and 192F ;D

The new PID I installed is working outstanding. I put the butts on frozen and had to up the OUTL setting to 11. Once the butts started to come up to temp I had to drop the OUTL back down to 8. The PID had about 10 degree swings either direction and did create a good amount of smoke. I have been very happy with the performance of this mod to Traeger.

$0.99 a lb?   Best i can find is $1.89 a lb right now.

I do need to make a few and put them in the freezer
