7 Pepper Hot Wings
« Reply #-1 on: January 18, 2014, 05:37:27 PM »
My wife Bev is visiting the new grand baby in Virginia this week so I decided to try some spicy wings tonight.
She is okay with some spice, but not the spice I like.

Starting off with a salted baked potato.

Put in foil after using some EVOO on the potato.  Covered it with the kosher salt and some Montreal Steak seasoning.

Put onto the Weber Performer using KBB.

Wing drumettes were marinated over night with Guy Fieri’s 7 Pepper salsa.  Seasoned the drumettes with Outlaw BBQ
rub, which I received from my good friend Smokentime.

Put onto the Performer and I added a chunk of oak to the coals.

Drumettes and potato are done at the same time.

My dinner is served.  Note:  No veggies!  8)

Very delightful meal.  Drumettes were not as spicy as I hoped, but they were definitely yum yum good!

Great looking plate ;D

Let me ask, you would wash the potato all that salt with spice into the foil and on the Q.

What does that do the potato? Also are you forking your potato?

Thanks,

I am not sure of the scientific words for it, but the salt seems to do to the potato what it does to
steaks. It pulls out moisture than returns it to the potato, making it real fluffy on the inside. I didn't do
the fork thing on this one as I was rushing to beat the darkness.  But I normally will poke it in several
places, coat it with olive oil and the salt and spices. The spices don't really penetrate that much but does
add some flavor. If you try it you will find that when you remove the potato it is sitting on a bed of hard
salt.  Next time I do it this way I will take a photo to show you what I mean.
