Friday Night Chops

Now normally Pork Chops are my nemesis, I never really get them cooked right. I figured what the heck, I'll try them on the PBC and see what happens. I rubbed with kosher salt an hour before, then pepper, garlic and cayenne. Instead of putting them on the grate, I hung the little chops and smoked them till they hit 140. I then pulled them and put the grate in and let it get screaming hot and put them back on and sauced them with that "adult mustard sauce" from amazing ribs. I pulled them at 150 and let em rest. I also threw on some cheese and parsley Italian sausage as well. I have to say they came out dam good! I'd love to have some extra time to brine the chops more but with the salt alone they definitely had some juice to em
