Turkey breast in TBE

Having only seven here for lunch this year, I decided to cook just a turkey breast rather than a turkey.  Although I've cooked several turkeys in it, this was the first time cooking a breast in TBE.  After drying it on a rack in the refrigerator overnight, I injected it with melted butter and seasoned it with S&P (wife requested no rub this year  :( and brushed it with cooking oil to crisp the skin.  I used, what I call, a Tommy hanger.  Got to give Tommy credit for that.  It is a cut down rotisserie spit hanging from a bar across the top of the cooker.  I was able to center it over the cooking chamber resulting in more evenly cooked breast.  Another advantage to this is I don't have a basket to clean after the cook.  Removed the lid after 40 minutes and pulled it at 165.  Total cook time was 1 hour 28 minutes.  It was very moist and we had very little leftovers.  My grandson told me the next day that my turkey was so much better than the one he ate at his other grandparent's house Thanksgiving night.  He said it was so dry that he couldn't eat it.  Sometimes, nine year old kids can be brutally honest.

I,ve been hanging things in my TBE and SRG for years but always wrestle with keeping birds from leaning over randomly.
 Using  the rotessorie spit is a fantastic idea!

Boy, that's a clean cooker, a lot cleaner than mine.  What size was the breast 8-9 lbs?  I'm going to do one this weekend, I'm guessing ten minutes a pound is the rule of thumb.

Saw this today. We had no kids or grandkids around for Christmas this year, so wife and I did things real simple. We decided on a turkey breast, and there is no better way to do it than doing it in TBE. Simple salt and water brine for 8 hours (thought about doing this on Christmas Eve) and then plopped it in TBE. Sprayed with PAM and used Grill Mates for seasoning. I simply put the breast (or full bird if I am doing one) in the basket and don't really worry about the angle. It cooks just fine! It is about 10 minutes per pound. The "Tommy Ring" is important. It raises the bird up a bit to keep it away from a dead zone. I use a discarded spring pan for cheesecakes my wife was going to throw away. Before that, I used the extra shelves I bought to go with the basket years ago.
