Beautiful color, that skin looks perfectly crispy!  :P

Something I have been doing with my chicken cooks is adding a couple of pieces of apple wood. It gives the chicken that darker color and adds to the favor. Be careful though not to add to much as the smoke can over power the chicken. I will add one or two small pieces at the beginning of the cook.

I haven't tried apple. I use a little cherry for the same effect, but you are tight need to be careful. Very nice looking skin!

It's amazing just how far this yard bird has gone to feeding myself and my son. First night we had hot chicken sandwiches from one side of the breast, yesterday I  chopped up the other side and added it to a can of thick chicken soup and today I scrapped away any other meat and added that to more soup. Tonight for a snack there is still the wings and legs :)
Meat prices the way they are you have to make things stretch. Learnt that from my mom who lived through the depression.
