Nice looking brisket! I am going to try my first one on the PBC on Sunday. I had a few questions about the cook. How many pounds was the brisket? Also how long before you wrapped and what was the total cook time?

Sorry, I don't remember the exact weight, but I think it was probably in the 9-10 pound range. Due to the recent adjustments I made (from phone conversations with the company owners), I was able to get the internal temp up to 150 in only two hours (much faster than any of my previous efforts). It stalled there for awhile and I eventually took it off to wrap in foil after about 3 hours and 15 minutes. After wrapping and returning to the PBC, the temperature began rising very quickly and was already to 213 in another hour and 15 minutes so I removed it, wrapped the whole bundle in towels and placed in my cooler to rest for over two more hours. It doesn't necessarily need to rest this long, but I wanted to hold it until we had some guests coming over to the house and it was finished earlier than I expected. Wrapped like this, I'm sure it can stay warm for even much longer.
