Title: Apple & Apricot Double Smoked Ham
Post by: GunSlinger on December 11, 2016, 12:03:12 PM
So I just started this smoke a little more than 1 hour ago on my new Blazn Grill GI. I am pretty much following Malcom Reed's recipe; however, since I'm on pellet pooper I 'm going 200 degrees for the 1st hour to get some good smoke on the ham. Then I will bump up to 285 for last 3 hours or when IT reaches 140. Using CookinPellets Perfect Mix for the job too.

Alright, here's the rest of the pics. When the IT hit around 135ish, I brushed on a glaze made from apple butter, apricot preserves, apple juice, brown sugar and a lil apple cider vinegar. Then when IT reached around 140, I pulled covered in foil and let set until dinner tonight. When I got home I re-heated the ham in the oven 300 degrees for 20 - 25 minutes. I made sides of baked potatoes and sautéed butternut squash (butter, garlic, cumin, cinnamon, cayenne pepper and S&P.

Thanks for all the nice comments.

Yes, I love my new grill. On that glaze, next time I would add either cinnamon or nutmeg; just needed a little more spice but the aromatics from everything were great. No left overs for tonight's sup  :P

Looks like I we are doing ham in the near future and I thought of your post to guide me.
Will also use CookinPellets Perfect Mix in that it is my go to pellet choice.
Thanks for posting. :)
