Title: Smokin Good Pulled Pork!!

9 lb bone-in pork shoulder. Fat side up.
Rub of salt, pepper, 1/2 teaspoon of flavored ground coffee. I used amaretto this time. 1/2 teaspoons each of garlic, onion powder.
1/8 teaspoon nutmeg.
5 or 7 shakes of hot sauce.
Mix well and rub all exposed sides. Not bottom. Now cover with dark brown sugar. Put in shallow pan. I use a toaster oven pan, it's perfect.
Add in some red wine. I start at 180 with our 100% Hickory pellets then raise to 225 and finish with our Perfect Mix pellets until I hit 200 internal. About 12 or so hours later!
Make sure to have liquid in pan at all times. At end I suck out liquid with turkey baster. Put juice in a coffee cup to separate. Pull meat then use turkey baster to get juice from bottom of cup, leaving fat behind but grab all the juice and flavor. Now mix juice back into pulled pork till moist. I'm not a big sauce guy and this really adds a bunch of flavor back in, so sauce isn't really needed!

Little bit different take, sounds interesting.

I do the same with the juice.  If I have extra, I freeze it later.
