I did some cold smoking yesterday.
I smoked 15 lbs. of cheese & 1 lb. of spam.

This is the first 4 trays
I always cut mine into small portions before smoking in order to get more surface area.


I didn't get a picture of the second smoke. V started wrapping it before I thought to get one.

These three pictures show all I smoked yesterday.
I had 3 varieties of cheddar, swiss, farmers, havarti, jarlsberg, pepper jack, & Spam.   




I know many, if not most, say to wait 4-6 weeks before eating the smoked cheese.
I have eaten it after a month, but I prefer to wait at least 2 or three months.
I think it just gets better & better the longer it sets.
I actually think it is at it's best after about 4-5 months.

I ran completely out before I smoked this, so I'm pretty sure this batch won't make it that long.

Looks like tasty morsels to go with a beer so nicely done.
Never thought of smoking Spam but, thanks to your post, I will give it a try. :)

Man that looks simply fantastic. Noticed you smoked the cheese & spam in your Bradley smoker. I recognized the racks. I've smoked my fair share of cheese in my Bradley in the day ... You've inspired me to smoke some cheese in my MAK now that the ambient temperature is cooling down here in Northern California.

Great job! I can still remember that first bite of cheese of smoked ... It tasted like an ashtray!!!! But as you pointed out - it was scrumptious once I waited 4 plus weeks and the longer I waited the better it tasted. By the way, how long do you need to wait before eating the Spam? I love Spam and looking forward to smoking some.

The spam is good to go right away.

Some of the cheese will be given at Christmas with the advice not to be in a hurry to eat it. :P

Yes it was originally made for military use.
There is a deli lunchmeat that it tastes like....minced ham.

It may be nature's perfect food, except it is not natural, but it is good.

Spam was a part of the K-rations and also found its way into C-rations.  Spam was so ubiquitous in Hawaii, that it today is part of their cuisine.  Spam does go well with crackers, and I bet it would taste even better being smoked.

People either love it , or hate it. There is no in-between. :)

I am in the "love it" camp.
I never had it until I was an adult, but now I always have some in my pantry.
Nothing better than a fried Spam & onion w/mustard on homemade bread.

You can actually buy smoked Spam, but it is better home smoked.
V loves it for breakfast.

I like spam and have hot smoked it a lot. I did some cut up in chunks then in a foil pan with BBQ sauce and made it like burnt ends. Some of my spam cooks are posted in here. I never tried cold smoking it. Cheese looks Great Rog!!! Don

Spam is a favorite and now that it is available in individual packs Sweetie keep a week supply always.
