How long can I wait?
« Reply #-1 on: May 03, 2017, 07:01:31 PM »
So I cold smoked then hot tub time machined a couple London broils for 14 hours.  I put one directly in freezer and the other in fridge. Haven't unsealed it and I'm curious how long I could or should wait before I sear off the refrigerated one and chow down??

No, not at all.  It should keep several days sealed up in the fridge.  If it were in MY fridge, though, I'd be firing up the smoker -- sure sounds good  ;D

Ha now I get it. Awesome to know, it's  raining guinea pigs and hamsters here. So probably a quick sear in CI then hopefully a lil pan sauce it is.
