SHORT RIBS ON THE PBC?
« Reply #-1 on: July 29, 2017, 03:44:39 PM »
Hi there,

I've been searching for YouTube videos on how to cook beef short ribs on the PBC, I think I've only come across one, there tons on beef back ribs though.

How has been your experience with this? Also, do you find much difference between select grade short ribs and choice?

Thanks.

I've done beef short ribs a few times and they turn out great. I've done them various ways, some using a crutch near the end and some without. I can't remember the grade of cut I had. You can smoke them till their done with no wrap. The last way I did them was this:

I put them on the grate for 90 minutes, then placed them in a pan with a little bit of liquid and foiled it closed and placed back on the grate. 45 mins later pulled them from the pan and back on the grate with some sauce. Pulled them at the 3 hour mark. They were probably the best ones I've done yet. I might let them go another 15 minutes in the pan but what fat that remained in the ribs melted like butter in your mouth.

Here's a video, it's not a PBC but it shows a good technique for doing the short ribs on a smoker

I've done them a few times. Never wrapped. I've only used prime ones from Costco. They come out great
