First Pork Butt Attempt(non-SRG Big Easy)

So I got some help with this from the famous Tommy, but I did my first pork butt in the Big Easy over the weekend and was really happy with the results.  Here's what I did...

I was working with a 6 lb Boston Butt.  I trimmed it up some, then coated it down with CYM with a little honey mixed in, then I followed that up with a good coat of Bad Byron's Butt Rub.  Then I covered it and let it sit in the fridge for a couple of hours.  I made a rack about halfway up in the basket with the two chicken leg racks and dropped it in about noon.  I let it get to 160 IT, which took about 2.5 hours, then I took it off and double wrapped it in HD foil, then back in the big easy until it hit 205 IT about 35-40 minutes later.  I took it off, wrapped it in a towel, and let it rest for 2 hours.  I took it out to pull it apart for pulled pork and it pulled apart like butter!  The bone came out really easy and it actually fell apart as I was unwrapping it from the foil.  There's a few pictures below from the prep, to when I unwrapped it from the foil, to the finished product after pulled apart.  We put it on rolls to make sliders with and they were real tasty!  I'll definitely be doing that again.

So glad it worked for you.           INFRARED butts are wonderful just hard to get a good smoke on them since they cook so fast.   Looks like I was close on times as well  ;)

I try to give good info thats for sure  ;)    Infrared cooking is one thing in life I do know  :D :D :D

I have sooooo many butts cooked in infrared (SRG's and BEESR's) I know when to pull without reading IT.

Hi I'm new to the forum, smoking and grilling in general. I have a really stupid question. Why do you wrap it in foil and then later on wrap it in a towel. What does that do to the meat? Does it allow the juices to mix with the rub for a better flavor? Sorry for the stupid question. It looks fantastic by the way!!

Acts as insulation and helps keep heat retention. Many also put that in a cooler (no ice). When I do I also stuff some newspaper in the cooler to further insulate.
Why couldn't Noah have swatted the 2 mosquitoes?.

First - no need for feeling that any question is stupid. If we can save one another time and frustration by sharing our experiences - everyone benefits ;)

When you wrap the butt with foil, you are attempting to keep all of the moisture int eh meat you can. The towel further insulates it and allows more cooking to occur - because of al of the radiant heat energy that has been adsorbed by the meat.
To carry this effect further - place the foiled and towel wrapped butt in a cooler that fits it pretty well. Add another towel wrap if needed. Or - you can even stick it in a microwave oven. Of course - DO NOT attempt to turn on the microwave oven..
Leave the butt like this for a couple of hours to reap the real benefits of moisture and tenderness from the extend "passive" cooking time.
