Flashover BBQ Ribs!

Flashover BBQ Ribs Recipe from Jason C. Enerson - 1 of the winners of our recipe contest on Facebook and a 40lb bag of Cookinpellets!
-Remove silver skin membrane from bone side of ribs. Use knife to get corner started then grab with paper towel to pull off.
-Dry off ribs by blotting with paper towel
-Slather ribs on both sides with yellow mustard to help with adhesion of rub.
-Liberally apply rub of your choice to both sides of ribs.
-I prefer to let them sit in the fridge overnight at this point, then let them sit at room temp. for 1 hour before putting on smoker. You can just let them rest while smoker is warming up and skip the overnight part.
-Preheat smoker to 225 degrees. Add Perfect Mix or Hickory, whichever you prefer
-Put ribs on smoker, meat side up
-You will smoke for 3 hours
-Spritz with apple juice/Jack Daniels Honey mixture in a spray bottle every 45 minutes
-Pull ribs off smoker and prep to wrap in tinfoil. Lay a line of agave sauce or honey along with Parkay squeeze butter in the blue bottle on tinfoil, place ribs on tinfoil and repeat the mixture on top of the ribs. Wrap tight in the foil and place back on smoker for 2 hours.
-Pull ribs out of foil wrap and put back on smoker. This is where you can apply BBQ sauce if you wish. Leave on for 1 hour to caramelize/set sauce.
