Low carb Calzone

Found this cheese/bread the other day and thought I'd try it.

2 cups part-skim mozzarella cheese finely graded
3/4 cup of almond flour
1/2 tsp salt   
1/2 cup + 1 Tbsp parmesan cheese         This recipe if similar to the deep dish pizza Tenthunter made a few weeks back
                                                                                                    His did not use parmesan cheese

1 egg (used at the end before baking)
 
Mix together in a double boiler til the mixture is dough like then remove and place on a sheet of plastic wrap.   Then use another sheet of plastic wrap on top to make it easier to roll dough to the size you want.   Add ingredients that you want in it then fold over and brush with 1 egg beaten 

Preheat oven to 375, then place the calzone on a cookie sheet and bake 18 to 22 mins.   Should look like first picture  :thumbup:

If I figured carbs right for the almond flour (3)  and pepperoni (16 slices for 1 carb) there should be only 4 carbs in the whole calzone

All I can say is WOW!!!    If low carb is you thing this is a bucket recipe you must try!!

I was at a restaurant last evening with the family, waiting on our food, getting more and more hungry by the minute, when my phone notified me that I'd gotten a text...

By mixing a double boiler, I take it this is over heat to melt the cheese into the "dough" mixture.  Correct?
