New addition to the cooking arsenal

A year ago, I picked up a Red Box Smoker at a local shop during the open house competition.  I realized that with the girls getting bigger and now adding boyfriends to the mix and the smoker was not enough by itself.

This past Saturday was the open house again and I picked up a WSM 22"!  Got 10% off, so it cost me$390 but I also got a bottle of  BBQ sauce and a large bottle of Cherry Bomb meat rub.

This should be fun!!  Pictures will follow on the first cook.

Thanks... I have used one - once before in a competition, but that was it.  This should be fun.  I like something I read earlier that I could fit 6-8 pork butts on it..... that could make it fun for a big event!

Read the articles about the WSM , really will shorten the learning curve.

Im not going anywhere, but thanks for the heads up. 

Met KCBS champion at the Open House that will also be in contact to help answer any questions I have also.  It was funny though, I had been told to season the first time using it to help dial in the cooker.  He completely refuted that and I had to hear from my wife multiple times that I was wrong.....  She missed the part where he said you did not have to, but could... Oh well - food cooked on it will make her happy!

I must say, the first attempt came out pretty good.  I have to get online and post the pictures in a new posting.

That said, I did a 6 1/2 lb brisket on the top and a 8 lb picnic cut pork shoulder on the 2nd rack.  It was my first attempt at the brisket, but I used what everyone posted plus the virtual bullet site to monitor it.  My employees loved it and keep asking for more.  The pork shoulder was a loss.  My seasoning was a new one that did not have a lot of flavor like I am used to with the TBE.  (It was free seasoning, had to try it).  The cut was not as tender - probably because I got tired when the brisket finished and I short cut the pork.  Anyway, new post to be done with the pictures sometime this week!
