My first SNS cook

So I got to really use the new toy Tuesday for some baby backs.  Lit 15 semi used coals and then When good and ashed  over I topped it off with a mix of good used and new KBB.   

The ribs were dry brined overnight and then rubbed with a modified Jan's rub and some Bad Byron's
I was pressed for time and needed to go around 260-265 to speed things up and man did she lock right in. Used a couple pcs of pecan and a couple of apple. Here they are at about 2 hours
I did wrap at about 3:15 for an hour and fifteen minutes then glazed with some homemade apple butter BBQ sauce and let set for 20 or so. She likes a lil more tender so I went for close to fall off the bone and I pretty much got that.  Here's a pic with some sharp cheddar cheese and mac. 

All in all I'm super happy with my first go round.  Looking forward to throwing more stuff on this thing.  Thanks for looking this guy also approved!!
