Stubbs Charcoal + Hickory Chunk for Pork Shoulder?
« Reply #-1 on: September 01, 2017, 01:42:49 PM »
Curious if anyone has tried this combo in their PBC?  I'm about to go grab some charcoal, and am considering grabbing some hickory chunks to try adding a chunk of wood to a cook.  I've read the Stubbs is a bit milder than Kingsford so thought it may work well with a stronger wood like Hickory.  Is this stupid?

I've done it a few times and has worked well. I think Stubbs has more of a wood flavor compared to Kingsford

Stubbs is good charcoal.  It doesn't seem to get quite as hot as the Kingsford, though--at least on my Weber Performer.  But that can be a good thing in the PBC.

Go easy on the wood in the PBC. You do not want to oversmoke. I would take a fist size chunk and axe it in half. Make sure to set the wood in the charcoal basket not under the meat. This way the rendered drippings will not extinguish the wood and keep it from burning.
