First cook on the free smoker from Albert

As most of y'all know Albert (forum member) gave me his old smoker (MES) Cajun Injector brand smoker that was not working.

Since I was off Tuesday from work I thought I'd give it a look ove to see what was going on.   I removed the rear panel inspected the wires, connectors, etc..   I did not really find an issue but did reconnect all snap connectors and tighten anything I could get a screwdriver on   :D

Plugged it in and set the timer for 4 hrs and the temp to 225.  Within 15 mins the temp was at 223




So since it was working I thought I'd try a cook


Cheese stuffed chicken wrapped in bacon


Had to use sauce because it was such a fast decision to cook I forgot to season the bird ??? ??? ???

Ala in all not a bad cook, just got to get use to low and slow.  Bacon was only crisp on the outside not the inside like it would have been in INFRARED


Not to bad but Kimmie wouldn't touch it  :(  Then again I should have tossed them into an SRG for a few mins to finish

Not bad!  I think I am going to do thighs with cheese next time.  If I ever get the rack for the TBE, then I will probably try it in there...

Pretty good results for the cost!

Used pellets for smke, problem there is you can't control the amount of smoke unless you just use a few pellets at a time.  If you added lets say one cup then you get a very heavy smoke for a few mins NOT GOOD.    Just need to play with it for a few cooks to get the feel I guess

Albert is a very generous guy...

I had the same problem whenever I used pellets in the smoking tray.  Huge smoke for a little while, then no smoke...bad taste on the food.
I have a friend that uses his MES regularly and adds smoke with the Amaz-n-smoker and pellets.  Good results for him every time, it seems.  I haven't been able to keep the pellets going when I use the same smoker in our MES. 

The MES is designed to use chips.  Of course, Tommy will find a way to modify it to use most anything.
