Did a boneless prime rib last night, second time doing one, and it came out great.  I dry brined it in the morning, the pulled it out of the fridge an hour before the cook and rubbed it with olive oil and salt/pepper/garlic powder/onion powder.  Smoked it with Kingsford and apple wood to and IT of 125, then seared on my Weber Genesis.  Very happy with the results!

Functionally it worked well, but there really wasn’t much in the way of drippings.  The other benefit was it acted as a baffle.  I think it’ll be great for the next butt I smoke.

looks about perfect to me.
By pulling it at 125°, do you know what  IT you had after resting ?

I didn’t take another reading but I’d guess it was in the low 130s somewhere.  Definitely somewhere between rare and medium rare.

To help with that I kept the lid open on the grill when searing.  May be an obvious statement, but figured I’d share.
