It's "Tasty Tuesday!" With the bitterly cold weather being experienced across many parts of the country, we thought, "Let's take advantage of the freezing temperatures by cold smoking ice cream!"
MAK owner Dale Maas in Wisconsin came up with the technique a couple of years ago. If you have a 2 Star, its a unique way to use the Warmer/Smoker box and enjoy a new taste treat!

Cold Smoked Ice Cream
(serves 4-6)
Ingredients:
1-4 half slabs of your favorite flavor of ice cream. Slabs should be cut into 2 inch thickness each.
Pan small enough to fit inside Warmer/Smoker box (approximately 9”x12”x3”).
Optional: 1 bag of whole cranberries (to used as sauce for the ice cream)

Preparation:
Make whole cranberry sauce according to package directions. For a more tart sauce, reduce the amount of sugar called for in the recipe by half. Once made, set aside and allow to cool.
Cut ice cream into (2) two inch thick planks. Place ice cream upright inside pan in order to expose as many sides to the smoke as possible.

Smoking Process:
Open the Warmer/Smoker box and place pan of ice cream inside. Close the lid. NOW, start the grill, leaving the temperature setting on Smoke. Allow grill to start and continue smoking for approximately 3-5 minutes after grill ignition has been completed.
Remove ice cream and re-freeze for approximately (1) one hour. Then remove from freezer, add cranberry topping and enjoy.

Optional: Some grill owners also place a mound of ice cubes below the vents on the left hand side of the Warmer/Smoker box to cool down the smoke even more. This is a good technique to use if the outside air temperature is around 32F.
