Title: Bone In Prime Rib Roast

Just finished prepping the prime rib roast for tomorrow night's dinner. Put in sliced cloves of garlic, then EVOO on outside including commercial all purpose rub (SP&G). Will throw on more SP&G right before going on the pit. Going to smoke at 225 until IT hits about 110, then I will remove the roast and tent with foil, crank up grill to 400, and finally put the roast back on for approximately 20 minutes to reverse sear the outside. I am aiming for IT of 135 for medium rare. Can't wait! Using PM pellets again.

Here's the finished product. I made a sauce out of unsweetened whipping cream, horseradish, mayo and yellow mustard. My wife made brussel sprouts from off the stalk drizzled in EVOO, balsamic vinegar and bacon grease and roasted hassleback potatoes.

I had to re-heat the roast for dinner so it was a little more cooked than we like (little more red/pink in the middle would have been perfect) but it still came out great. My wife made prime rib street tacos for dinner last night using the remaining leftovers and it was fantastic.

You guys make a great team. That is one great looking meal. Little more about the tacos wouldn't hurt  ;)

LoL - yes when I met my wife 15 years ago she says I didn't even know how to boil water. She looked in my bachelor fridge and saw mostly Marie Calendar tv dinners...but at least I got the good kind!

Prime rib street tacos - just heated small corn tortillas in a skillet. Then thinly sliced prime rib pieces searing both sides; maybe 1 - 2 minutes, and finally drizzled the horseradish sauce on the meat.

I got the sauce from the link below except I don't add the final Tabasco sauce. Also I couldn't find unsweetened whip cream so I just bought heavy whipping cream whisking it in stainless bowl until it turned foamy or almost like whip cream. Takes a few minutes to do it but in the end it was worth it.
