OK, does anyone have an opinion, or first hand knowledge of this quality of meat, either the pork or the beef.

I've only bought custom blend burger from Flannery Beef for very special occasions / and close friends, now I have a few very special friends I'm kicking around cooling either a Wagyu Brisket, or Berkshire BB's.

I have friends that have used the Waygu Brisket in bbq comps and swear by it. Another buddy buys the Berkshire Butts just for his own personal satisfaction. Not sure where they bought them, but doubt if you can get it much cheaper, unless you know someone in the restaurant supply biz.

I just checked with him..............gets the Waygu from Buckhead Beef and sometimes from Sysco thru a friend that owns a restaurant

Thanks for the info, I've always felt you really can't go wrong with high quality ......  simply season, pay attention to the cook, and everyone's happy !!!

If y'all remember, Turtle sent a wagyu brisket from Snake River Farms to the Gathering last September. Dee and his SIL, Brad, smoked it and everybody loved it. It was excellent....tender and moist with a real beefy taste. I still can't decide on whether it really is worth the extra price, but it definitely is good.

Nope. Just can't spend that kind of money.....however.....that is the type of butt that is used on the comp circuit..........maybe one day.........

A top competition team on the KCBS circuit would probably be using Springer Mountain Chicken thighs at about $31.00 plus shipping per competition. He would also be using a combo package of Premium Compart Duroc pork including 2 pork butts and 4 slabs of ribs at about $175.00 plus shipping. Then he would probably use either Strube Ranch or Snake River Farms brisket at about $190.00 each including shipping and he will need 2 of these briskets. His total meat could run as much as $650 dollars per contest for all premium products.
