My brisket cook did not happen today

When I lived in the valley, I would get my briskets at Smart and Final. Their inventory moved fast because lots of local restaurants shopped there. They got their briskets from Harris Ranch which is darn good red meat. I would always have the guy bring out a case and I would grab one I liked.

I would then toss it in the back of the fridge for 3 weeks to wet age my Select graded treasure. I would never have any problems until this morning........

My alarm goes off at midnight and I stumble downstairs and take the brisket out of the fridge and cut open the cryovac packaging.........

The smell would have knocked a buzzard off of crap wagon.

Why did this happen, I only had this brisket for a week and a half?

I know why. The sell by date on the package means diddly-squat.  The kill/package date is the date that matters. You can go 30-45 days safely as long as the cryovac
packaging is air tight.

Mine was. I figure the brisket I got at Wal-mart might have been setting out a while to be purchased while I got them closer to the kill/package date at Smart and Final. I did not think about that when I made my purchase.

I kept the brisket in our bar fridge that is never opened so I know I was at a constant 32-34 degrees. I simply bought a older brisket at a store where briskets do not normally sell that fast.

I might have wasted 50 bucks, but I felt this little stumble I had should be shared with all of you...............

Right!!!    My last brisket was Easter of 2013.  Last year was a whirlwind and I couldn't do one. I was so amped up to slo smoke a brisket, I only slept two hours and still had some pep in my step when that alarm went off........now I gotta wait some more...... :'(

My brother-in-law just got a promotion to sports editor, I told we will celebrate with a brisket next time he visits for a weekend.  I hope it is soon.

The nose is quite a good indicator of spoiled meat.
Might not be able to age the Wally World briskets, at least if spoiled you can return.

The smell was so bad LA, that I gotta trim my nose hairs ;D

Luckily, Wendy keeps the receipts, but I think I cant because I wet aged the brisket long after the sell by date...........

THAT is a very good point Scott...I don't have any cryovac packaged meat right now....If anyone does, and could take a picture of the labeling - that shows any information that would help us determine the packaging date...I think it would be a good sticky.

I don't know if this is what you are looking for, but this brisket was cooked on 8-9-14.

That is the correct date. Wal-Mart only lists sell by. The Smart and Final ones have the kill/package date on the box. Not on the packaging as well. I think the packaging on the cryovac should include the date.

Wendy did give me the OK to order a Kobe/Wagu cross packer because I am so sad  ;) ;). It is dry aged 28 days before it is packaged and shipped to my door.....which will be 4/3/15... 8) 8)
