Deer Harvest and Procesing - Warning: Contains Pic of the Deer
« Reply #-1 on: January 18, 2018, 12:44:30 PM »
I've been doing a lot hunting this year for the first time in years!  Now that I've lost some weight (still losing) and am feeling better, I decided I was going to do what I needed to get a hunting license and go hunting.

Well, my friend, Joe, and I went out on opening day of muzzleloader season (about a week and a half ago), and I finally got a deer!

I though it was a doe when I shot it, but it turned out to be a young button buck, about 95 lbs.
I've made this pic as "everyone-friendly" as possible.

Click here for a full pic of the deer - Viewer discretion advised!

We got it back to his garage and got it skinned and quartered out so I could get it home and finish processing it myself.  This is one of those times when I'm glad I already have a good grinder, stuffer, etc., so I can do the processing myself instead of paying someone else to do it. Most places charge $75 - $100 per deer.

We ended up with a couple of sirloin tip roasts, a pack of round steaks (mostly top round), the eye of rounds, I kept one backstrap whole and butterflied the other to cut into steaks, and the rest was cut up for grinding.

I stopped by the butcher and picked up about about 6 lbs of very fatty pork trimmings (a couple jowls and fatty ends of pork belly) to mix in for grinding.

We ended up with just under 20 lbs of ground venison.

I've already utilized some of the ground venison for sausage, which I'll post later.   8)

And I'm not done hunting. Bow season is in, in Ohio, until Feb 04!  ;)

Couldn't see the picture of the deer but the meat looks good.   I love deer burgers and sausage.  Good luck on getting more this season.

Very nice. A 95 pounder in our deer camp might get you some ribbing

See if the pic is visible now. I could see it fine, but updated the links just to be sure.  Weird. ::)

That weight was a conservative guestimate after being field dressed, etc.  Based on the meat yield it's not too far off, though.  Either way, it wasn't as big as I was hoping for, but when you're shopping for venison in Nature's grocery store, you take what comes your way.   ;) :P

When I first saw it, based on it's size and no visible antlers, I thought it was a lone yearling doe.  It wasn't until we turned it over that we saw it was a young buck... okay, more like 95¢  :D
