Tasty Tuesday: Smoked & Sliced Pork Butt

Smoker Pete’s Pork Butt Roast
Ingredients:
1-3lb. boneless pork butt
3-4 silicone cooking bands
Olive oil
Meat probe

Dry Rub Mixture:
1 cup+4TBSP brown sugar
¼ cup garlic salt
¼ cup+1.5 tsp. celery powder
¼ cup onion powder
½ cup paprika
3 TBSP. chili powder
2 TBSP. black pepper
1 TBSP. lemon pepper
2 tsp. celery seed
1 tsp. Dry mustard
½ tsp. ground Thyme
½ tsp. cayenne pepper

Preparation:
Rinse the pork roast and towel pat dry
Trim off all of the fat cap
In a bowl or resealable bag, combine all dry rub ingredients and mix thoroughly
Rub outside of butt with olive oil and apply dry rub
Use silicone cooking bands to secure pork butt and hold it together
Wrap in plastic and refrigerate overnight

Cooking:
Start MAK and adjust temperature to 225F. Allow grill to come to temperature.
Unwrap pork butt and allow it to warm up to room temperature before placing in the grill. Approximately 30 minutes. Place meat probe tip into thickest part of roast.
Place roast on grill and plug meat probe into one of the 3 inputs on the Pellet Boss®.
Cook the pork butt @ 225F for (2) two hours, then raise the temperature to 350F and continue cooking until internal meat temperature reaches 160F.  Remove the pork roast from the grill and wrap in foil. (Be sure to unplug the meat probe from the grill).
Return roast to the grill and continue to cook until internal meat temperature reaches 187F. Remove from grill, unwrap and allow to “rest” for (15) fifteen minutes before slicing against the grain. Be sure to remove silicone bands before slicing roast.
