Hanger Steaks
« Reply #-1 on: August 21, 2013, 08:52:07 PM »
Picked this up today at RD.  As usual I was not sure exactly what was in the bag.

Did a little research before opening.....which helped.

My question is that their seems to be a lot of waste to get these trimmed up properly. Is that pretty usual?  Started with 5.3 pounds and ended up with about 3.6 pounds.

My cutting skills are average......

That's about norm for Hangers from RD.  They are fantastic after a quick high heat sear!

Looks like some good meat!! Never noticed a perforated UPC label before, guess that's so you cant pull the sticker off and put it on a higher priced cutoff meat. Never even thought of doing that, darn-it :)

Kind of like flank steak. Give it a high heat sear to medium rare.

Or you could try slow cooking it like a Trisket ???

Ditto!

Good score on the hangers and yes, there can be some waste.

Marinated them overnight in a vac container with lime juice, olive oil, watsa sauce, little mustard, and garlic. Blasted them on charcoal until 125 IT.  Just sooooooo tender. Made fajitas with the meat. Before I knew it they were gone and I forgot to take pics ???

Sounds excellent! Might have to try that on the discada. Thanks!
