My local butcher had a Facebook contest

Well I didn't win, but thought it was kind of fun.

Can you identify this steak by its actual muscle name, and not steak cut. The answer is not chuck, flank or any of those, but the actual muscle name.

Here is what my butcher said.

The longissimus dorsi, or spinalis dorsi steak. It is the cap off the rib eye. Not too many butcher shops will peel this off, as it is the BEST part of the Rib Eye. But if your buying the whole rib its a great treat!
