Introduction

Hey all-
New member here who has never done any real smoking/grilling (aside from a regular old propane grill).

We just moved to the Dallas area from Boston and my 27-yo son has been talking about how much fun it would be to do our own barbecue.  I'm more of a "why would I go through all that trouble if I can just buy it?" kind of guy, but his idea has taken root to the point where I'm very excited about this whole thing.

He did a lot of the research.  I was leaning more towards the Akorn kamado, but he really liked the PBC and, since it was his idea initially, it just seemed right to go with the PBC.  So we ordered it and it's scheduled to arrive on Thursday.  So we're up for a great weekend: the Texas State Fair on Saturday and breaking in the PBC on Sunday.  Woo hoo ;-)

Looking forward to getting to know you all and soak in the knowledge around here.

Thanks, Art.  I'm still new to Texas, but I know enough that a guy from TX and a guy from NC are supposed to be arguing about what proper bbq is  :P

We just moved to the Waco area from Southern California a month ago. We went small town. We are about 30 minutes south/east of Waco in a little sleepy country town called Marlin.

I have emulated Texas style BBQ for decades, so I am right at home here "deep in the Heart of Texas"
