I don't know whether this link will work or not but I've got to give it a try. I saw it on Facebook this morning but couldn't trace it back to a standard URL. You may not be able to open it if you're not a FB user. Anyway, its a recipe for deep fried gravy-filled potato cakes. I am almost speechless. So much health food in one little package. This just might be the ultimate recipe of all time.

So what about a cauliflower potato substitute and au jus gravy thickened with CarbQuick, with a pork rind ground coating before frying? It might work for low carb with some tweaking?
- Mashed Potatoes (3) -- Cauliflower substitute
- 1/2 cup Grated Cheese -- OK'ish
- 3 strips Chopped Bacon -- OK
- 3 tbsp Salt -- OK
- 3 tbsp Pepper -- OK
- 3 tbsp Butter -- OK
- 2 cups Gravy -- Au Jus thickened with carbquick or similar
- Parsley -- OK
- 3 Eggs -- OK
- 1 cup Flour -- Carbquick
- 1 cup Breadcrumbs - Ground unflavored port rinds (or flavored?)

I just watched the video (I went straight to the recipe the first time). It lists a large amount of flour, but what is actually on each gravy bomb is small as it's the light coating before adding the egg wash and "breading"(pork rinds). If the other substitutions were made, unless you ate a ton of these, the carbs from the flour is almost nothing. There is only 6 grams carbohydrates per tablespoon of flour. The au jus could be thickened with heavy cream and reduced with a little arrowroot or corn starch to give that final thickening and a little gravy master to get the dark color back (has 0 calories/carbs).
I think this can be done without carbquick the more I think about it. From watching the video, the biggest hurdle I see is how well will the cauliflower substitute holds together for the molding process and will it work like the potato did in the original version? I guess we could add some microwaved mozzarella to the cauliflower to give it more body?

Of course for those of us on the low carb diets.....
There is always the cheese filled, bacon wrapped, ground meat bombs (not my recipe, but you know I'm gonna make some!):
- 1/2 pound ground beef, mixed with 1 egg and seasoned to your taste
- 1/2 pound bacon (1 slice per bomb)
- fresh cubed mozzarella (1 1" cube per bomb)
- canola or other oil for frying
- toothpicks (to hold them together until fried)
