My first post...and I need help.

Hello and Merry Christmas everyone!

Therein lies my dilemma.  The in-laws are coming over on Christmas eve afternoon to celebrate the holiday with us.  The plan is to not have a full holiday dinner but just a number of finger foods.  So, when the wife said she would just buy a spiral honey baked ham to make sandwiches with croissant rolls I said great.  I didnt really have the time to come up with anything myself anyway so I was fine with it.  HOWEVER, she has just informed me she doesnt want to buy some dumb small cooked ham for $40 just for sandwiches. So, she says she's just going to buy some COLD CUTS! Uuuugh!!  :o Of course, now I feel compelled to do something.  I just dont know if I have the time to do a whole ham in the smoker, but maybe? Or a pork tenderloin maybe? Bottom line is I need something come Saturday afternoon and I wont be home to fire up the smoker until tomorrow evening.  Hmmm...

I know you all are much more knowledgeable than me so I know this is the place to ask!  Thanks in advance for any suggestions you might have.

I would get one of the cheap 'water added' hams they have on sale this week (Korn Top, Cooks, etc.) and toss that in the smoker first thing Saturday morning.  Take it up to an IT of 140° and slice it for some hot smokey ham sammies..

Put in some bacon wrapped meatballs as well.  Just a bag of frozen ones from the store, wrapped in decent thin cut bacon.

All of that can be ready in just a few hours.

Get a pre-cooked , spiral sliced ham from any grocer. Sometimes they are sold with the pack of glaze wrapped up with the ham.

Then, if you have some time to fire up a grill or the smoker - try this recipe:

Perfect! Gonna do tees ham glaze! Also gonna do the bacon wrapped meatball idea ...thanks teesquare and squirtthecat! Itll be sothe good ...they'll never know what hit 'em! BTW, anyone have experience doing the meatballs with the frozen turkey variety ....or is that sacrilege?

Turkey's have balls? Meatballs are meat and if you are going to wrap in bacon why use turkey and insult the bacon.....Go with the real thing.

Any meatball you like will do John!


Couple of variations to try:

1. Dust the bacon with your favorite seasoning or BBQ Rub ( even better - BACON RUB ;D )

2. Dust on a bit of the chosen seasoning on the meat ball after you wrap it. Apply to the "crown" above the bacon, and it will marinade while it cooks.

3. Make  a finishing sauce by heating a jar of preserves in the microwave ( whatever flavor you like - I like blackberry, just pleas remove the lid before heating ;D ) when nice and liquid, usually 1-2 minutes - pour thru a fine strainer, and using a rubber spatula, squeeze all of the liquid into a bowl.
Add a "heat source" to taste - a jalapeno powder or similar- then add a bit of apple cider vinegar to thin it out so that you can put it in a squeeze bottle.



Now, let it cool down - add a bit more apple cider vinegar if needed so that it is a nice thick syrup consistency, but not so thin that it runs off of the meat balls easily.

Lastly - apply in nice ribbons to the meatballs after they are cooked and ready to serve.

This is my method for making "moinks" ( meatballs w/bacon )

But, yes they do ( well - the gobblers do) and when you are in parts of the country when turkeys are raised en masse - local diners often have turkey "fries" as a special....

"Fries" of this kind have nothing to do with potatoes!

For parties, I'll do some turkey bacon wrapped turkey meatballs for the lighter biters.  (they are good, BTW  ;)

Bacon wrapped tater tots are simple and easy as well..  (and PDG)

Or bacon wrapped Lil Smokies..


Heck, bacon wrapped anything!
