Rosemary garlic beef roast
« Reply #-1 on: October 03, 2017, 04:22:10 PM »
I had a small beef roast I needed to use so I decided to cook it in the SRG.
I seared it all around in a skillet, rubbed it with rosemary garlic seasoning & a little seasoned salt.

Then into the SRG. I used hickory blend pellets in the smoker box.

On low for about 50 minutes. Pulled it at 130°.

Plated with potatoes w/cheese & bacon, corn, & homemade dinner rolls

It was pretty good.
Could have been a little more tender.
Not sure why, maybe should have been cooked a little slower???

Looks good from here.  Did you cook it on high or low setting?

When I do a roast, I brine first then cook on low till IT is close say 110 or so then turn to high to crust up.

Remember, Kimmie likes beef DONE ;) so over cpooking ain't an issue :)

Looks real tasty! Maybe slicing a little thinner will help with the tenderness. I have smoked round, top and bottom roasts on my pellet grill to 130. Sliced real thin with a meat slicer makes some awesome sammies!

Thanks guys.
Tommy, I cooked it on low for the entire time.
I suggested to V that she slice it thinner to see if that helped, but alas, she had already tried it & it didn't help. :D :D

I had this in the freezer (vacuum sealed) for quite a while.

Do any of you think that may have contributed to the degredation of the quality???

It tasted really good, but was just not very tender.

Vacuum sealed should have been fine for at least a year. With any lean roast I am like Mike needs to be thin sliced. Don

Looks great!  I usually slice the lean cuts thinner as it makes it more tender.  That looks like a very lean piece of meat.

It was very lean.
I'm gonna slice the leftovers really thin & see if I find it more tender than V did. ;)

Sometimes you can do everything right and a piece of meat just will not cooperate.  Sure looks good from here.

Rog, it looks perfectly cooked to me.  In fact, the whole plate looks perfect ! ! !

I agree, the thinner the better.
