Smoked chicken enchiladas

I smoked some chicken in the PBC, pulled it and made enchiladas.   I've never made enchiladas before but these turned out great!  I finished them in my weber kettle but I think I could have finished them in the PBC on the grate.  Sometimes I forget about the cooking grate. .... :D

Nope, chef's snack.....and it was good.  I typically go with Plowboys Yardbird rub for chicken.

I would throw in another word of praise - but they all seem taken. I love a good enchilada - unlike The Smoke I have had plenty of bad ones (I live in Minnesota...  ??? ) These look excellent and I am going to do my best to rip them off!
