On top of Old Smokey.....

....are a rack of ribs.
Last week Publix had a sale on boneless ribeyes which means that they also had some beef ribs for sale. Decided to make them today. I hadn't used the Old Smokey for a while so I decided to use it for this cook.
You can't tell from the picture, but I made a charcoal snake on one side and threw on some apple wood chunks.



The mods I made to the old smokey was to add leg extensions made from pipe and a hinged grill.





Threw the ribs on for indirect cooking.


The ribs during mid cook.


Done.


On a plate with some corn and broccoli. Not a very good picture as the ribs were much better than they look.

Same problem here.....I can get em...but you barely get a small mouthful off of each bone.......but the meat is so good and tasty though..............

Nice cook.  Was very tempted as I walked past a Smokey on clearance a couple of weeks ago.
