I'm always on the lookout for different wing recipes to try, I'm a massive wing junkie! I'm curious as to what your current favorite go-to wing is? I'm currently addicted to the smokestack chicken wing recipe

I like to cook "Birmingham Wings", a recipe a good local pub had. I take the wings and season them with one of my local BBQ seasoning, or just salt, pepper and garlic sometimes. I let those get happy in a zip lock for a while then pour in Dale's Steak Seasoning liquid, kink of like a soy sauce with much more flavor. Dales is another local Birmingham product. I let them marinate as long as I can then I put them in The Big Easy, usually 3 or 4 layers on my racks and cook 45 minutes or until they are done. The top layer will finish first, take them off and put in a pan covered with foil, then take the other layers off as they are ready. Depending on how long you let them go they can come out an almost black color with a nice crunch. My wife makes homemade Bleu Cheese to go when them.

Is this the Dales you're referring to?

Just tried some Sweet Baby Ray's Thai Chili wing sauce and it is really good! I added some sriracha for heat.

Their buffalo wing sauce was not impressive however...

I have the Franks chili sauce in the pantry but haven't tried it yet. I haven't used Dales before on chicken, it's a bit too salty for my tastes. I have used Allegro Hot and Spicy if I don't let it marinade too long, the sodium is up there as well in that but has great flavor

Lately, I've been using Big Dick's Margarita Rub on my wings.  It's not hot in and of itself, but, you can always kick it up. I usually go with Frank's.

I've had it on steak before but it's a little too salty for me if it's over done
