Beef ribs on the KBQ

RG let me take the reigns on the KBQ today. We had two racks of short ribs on the plate left from our last haul. I love these things. They have a butt ton of meat on them. They cooked for about 6.5 hours around 240ish. Turned out nice and tender. You just can't beat a good beef rib. Thanks for stopping by!

Steph, those look great.  I love beef ribs.  They tend to be hard to find.  Kind of like bone-in rib roasts.

Thanks y'all. I may be in the minority but I'll take a beef rib over a pork rib any day. These are really hard to find here too. RG had to travel a bit to get them. You can find the beef back ribs all day long but they have just enough meat to piss you off. Lol.

I'm with you when it comes to preferring the beef ribs...and like you said, they are hard to find.  I have to special order 'em at the butcher shop.  I like to cook 'em in the offset with a salt & pepper rub a la Aaron Franklin.

May be callin' the butcher real soon.

Thanks guys and gals! Jaxon, I normally like just s&p too especially on brisket but I found a rub I wanted to try and it turned out real nice. But yeah, with beef, s&p is really all ya need.
