Chicken-Fried Steak by way of SV

I had three 1# chuck steaks that I cut from a large chuck roast and vac packed after a bit of S & P. Last night I started SV'ing them @ 130F for 21 hours. So this evening after quick icing 2 steaks then freezing, I opened up one steak, dried, sliced in half, then dredged in seasoned flour, dipped in farm-fresh egg wash, and finally coated in half panko, half bread crumbs that were seasoned as well. After this coating they rested for 30 minutes. Next up, they were placed in a hot pan with organic lard to brown on both sides.
The steaks were plated with pepper gravy and Italian mixed veggies.
The verdict...very tender, very tasty, and very good! Will definitely be doing this again! Oh also, that pepper gravy is the cat's meow with chicken-fried steak!

That looks fantastic!!  I have cubed elk steaks in the freezer.  I will be trying this, soon!

Looks great to me..love chicken fried steak.  I have a question tho..I air fried some ravioli the other day and it was fine, but have you ever run the Panko thru the magic bullet or whatever you have to make it a lil less crunchy? It was just a lil too much for me.. Just askin for opinions here.. .☆´¯`•.¸¸. ི♥ྀ.

Pam, I have not ever processed panko into a finer ground/mill. Might work. But that is why I mixed 50:50 with breadcrumbs.

There used to be a chain of Chicken Fried Steak restaurants in Texas called The Claimjumper. And it was always a treat to find one in my glide-path around meal time!

But - Gene - I think your version of Sous Vide then fried CFS is off the charts!
