Smoking my 74th & 75th butts/shoulders with INFRARED

Well been a long time coming but I made it, #74 and #75 butt/shoulds are in the TCS right now.  8)

Wonder if it's a record???  8)

I wanted to smoke them til an IT of 160 then pull and finish in my SRG but I ran long on time  :-[  Dang low and slow@()(&^$

I'm use to fast and finish with 4 hr butts in the SRG's not 5 hrs and a temp of 130  ???

Anyway, I pulled them at 130 figuring 5 hrs worth of smoke should do it!

I think when I hit 100 I'll retire the SRG's and talk Kimmie into a real pellet grill like a GMG or Yoder!

I don't think you can quit the habit.  But we'll see.  You'll have to learn patience first though.

Remember "low and slow" teaches patience!!  You already have practice developing patience when you cook steaks for you and Kimmie, right?  Well, ...  Just sayin'! 

Give the MAK 1 Star some consideration when you decide to go over to the dark side.  Talk to Sparky, or me (even though I have a 2 Star).

9 hrs later and here they are.  These will be served to kids that will be on a week long mission trip here in Huntsville.  I hope they like them....

Most mission trips are eating things like chicken feet soup and the such.  I've never heard of missionaries having it so good.  You keep feeding them like that and the mission field will grow.

If the average butt weighs 7 Lbs thats 525 Lbs of poke butt and who knows how many gallons of BBQ sauce ;D Nice Job Tommy!!
