I'll have my Chef's Choice XV Knife Sharpener at Jack's so anyone who wants can use it to sharpen their knives.  This sharpener will change your blades from 20 degrees to 15 if you so desire. I have and they are razor sharp.  I'll even have the instruction book; however, it hasn't helped me too much because of the scarcity of pictures. Dee
