Smoked cream cheese

Made cherry smoked cream cheese,it was about 45 outside and damp,smoked 2.5 hours....Smoker temp was in low 60's

used this amazen smoker

Really easy,keep temp below 84F.Keep cheese clean,we never touch it with our hands.

These only last about 6 weeks(edit from 3 weeks posted,that was wrong) for me in refer,but heard you can freeze and later thaw and whip back up in a mixer with no loss of flavor or texture,I havent done that yet.But I will to save some for gifts and trade,these are a big hit with folks.

I smoked some cream cheese (along with some cheddar) back in late December using the A-MAZE-N tube for some beer cheese spread to see if I could kick the smoke profile up a notch.  It worked like a charm. The cream cheese picks up smoke very easily.

Never thought about smoking cream cheese. Will have to give it a go next time I throw
some cheese on to smoke.

Good point,yes let it sit a good 10-14 days,forgot that.Its a little bitter right off the smoker.

Yes,its excellent on bagels,and with jam on bagels.Super on crackers.

Super trade item,I give it to the thrift store folks and they give us great prices and made good friends with them.My neighbor gives us eggs for it.She cant get enough of it.Smoking so simple and yet most folks its greek to them,gotta love it.

Good point,yes let it sit a good 10-14 days,forgot that.Its a little bitter right off the smoker.

The cream cheese & cheddar I smoked in December went straight into the beer-cheese spread off the smoker, no waiting, BUT it was getting mixed up anyway, and being a soft cheese spread it mellowed very quickly. Within a 3 - 4 days it was noticeably better and within a couple weeks it had a great mellow flavor.

Sounds delicious. Try goat cheese if you like that kind of cheese. Only downside for me is now my wife insists I do a couple logs with every smoked cheese batch (just kidding, I love it too)

Ooh that does sound good. I love smoked blue cheese, so I bet I smoked goat cheese would be great!
