So, I head into Smart and Final for my weekly cook.  Thinking a mix of beef and pork this time.  For the beef, probably a brisket, or MAYBE splurge on tritip. Larger than usual selection which includes... a 17.5lb rib eye?!?  You can figure out the price, so I just chuckled, and loaded some pork (cushion).  But the hook had been set, and the wheels were turning. 


Tight squeeze, but those 6 hunks of pork (9lb total) just made it on one bar.  The rib eye took about 3:45 to hit 125ish, and gave it a good hour+ in foil after pulling it.  The pork was on a bit longer, think it hit 190, but thermometer starting acting a bit peculiar so not positive.  It did not chop quite as easily as I expected, so maybe it was a little less.  (Which is fine, since I just eat it straight, not sandwich style.)


Oh... that rib eye was worth every penny!

Thanks everyone!  It is a testament to the PBC that I am a complete HACK and yet it can turn out such delicious meat of every variety.  This turned out pretty rare, which I love, but I'm guessing it would have benefitted from another 15-30 minutes (I'm learning that the rare-tender spectrum is a delicate balance, and not "the rarer the better"... which i think is a product of not being exposed to too many good cooks in my life).
